blueberry cheesecake empanadas::: fresh blueberries, cream cheese, and
obligatory 'forbidden' ingredients that we all know and love.
empanadas? maybe not ::: these are like blueberry cheesecake w a kick::: fresh blueberries, cream cheese, and forbidden mass-produced biscuit dough (no one will know). the original plot:: swiss chard empanadas; then i noticed blueberries hiding in the 'backroom' of the fridge. the blueberry/cheese/dough ratio is 'almost perfect'. i wanted a blueberry cheesecake 'wonton'. i know... whazit. it does exist: coldsoba spends (wastes) a lot of time on using fridge/pandora stores. she whines about it. i hope the red swiss chard doesn't languish and lose it's power in the 'backroom'.
blueberry cheesecake 'wonton'
1 tiny cheap can biscuit dough (pillsbury grands, etal)
1 container blueberries
enough cream cheese 2 coat blueberries
a bit of hellmann's mayo
1 tsp chipotle adobo
the scary part: roll the biscuit dough until they are paper-thin. i know::: it's impossible. do it anyway. make it easier: toss some flour and paprika on a flat surface. roll out your dough in this mixture with a rolling pin, a wine bottle, or even a beer bottle. the key is to reduce the dough with the least effort. add blueberry mixture onto dough;
